Summer Weekend with Chef Cindi

Summer Weekend with Chef Cindi

SUMMER WEEKEND - Chef Cindi

08-30-2012

We haven’t had a whole lot of time to vacation this summer, but last weekend we took a little getaway to Ocean Place Resort and Spa in Long Branch, NJ. It was just a 45 minute to 1 hour ferry ride from South Street in Lower Manhattan.

I didn’t expect much from the food, so I was pleasantly surprised that there were plenty of options for vegetarians and vegans.

The first night we went next door to our hotel to a complex called Pier Village. There are about a dozen restaurants offering every cuisine under the sun (or in this case on the beach, ha ha). We settled on a place called Avenue. We sat outside with a great view of the ocean, just a short distance away. It was mainly a seafood restaurant and we didn’t even look over the menu much before sitting down, so I figured I’d have to settle on eating a couple side dishes. Imagine my delight when I saw a vegan entree that wasn’t just a bunch of vegetables on a plate, but rather a balanced meal. It was Exotic Mushroom and Tempeh Fricassee with kale, leeks, shallots, brusssels sprouts and grilled cippolini onions in a savory veggie broth. It was honestly one of the most creative vegan dishes I’ve seen at any restaurant, much less one that isn’t vegan. It was delicious and very filling. Bravo to Avenue for thinking out of the box.

The next day after hanging by the pool we went back to Pier Village to eat at Shaka. Think Chipotle, but with a lot more options! You can see why I was drawn there from the description on their website:

“We operate our restaurant with “Earth Friendly” products and practices. Serve the freshest all natural products & source these items locally in

season. Prepare these ingredients using “From Scratch” recipes. Never use shortcuts. Only use recycled and/or biodegradable paper, packaging and tableware. Supply the Big Island Environment that recharges the Mind, Body and Soul.” What made the visit even better was that they offer a Little Dudes and Dudettes menu and it doesn’t just have your standard kid’s menu items. It has rice bowls and I just knew Alexia would love the vegan one. It was assorted veggies, rice and chips and I added black beans because she loves them! It also came with a bag of mini carrots. Alexia proceeded to dip the carrots and chips in salsa. I think she could have dipped all day long. She loves dipping her food and since salsa is a healthy dip I let her dig in as much as she wants. There were also lots of vegan and vegetarian options on the adult menu. I settled on fajita veggie quesadillas with baby spinach, assorted grilled fajita veggies, hass avocado and manchego cheese. I’m sure any of their veggie offerings can be made vegan, if you ask them to leave off the cheese. There were also veggie rices bowls, salads, burritos and tacos. Everything was super fresh and filling!

Saturday night we stayed at our hotel and ate outside at the Tiki Bar. It was such a gorgeous setting and there was a great cover band playing perfect beach music. I had the yummiest drink I’ve had in a long time there. It was a Bacardi Dragonberry Mojito. It was sweet and very tropical. The hubby had a rumrunner. Our drinks really helped set the mood along the beach. Alexia and I munched on bread, broccoli and pasta. [[BTW a good tip for kids (or adults), I usually stay away from kid's menus because they are mostly filled with unhealthy junk. Instead I order Alexia veggie side dishes or create my own dish for her with things I see on the menu. In this case I didn't see broccoli on the menu, but I asked if they had it and sure enough they did. I love restaurants that are accomodating like this. I recently read a story about pain in the butt restaurants who don't like customers to alter dishes in anyway or make special requests. I don't want to eat in those restaurants. I like Chefs who are happy to accomodate customers. They are after all in a service industry. I digress, but I do that to make the point that when you eat out don't be afraid. Usually you will encounter accomodating servers and Chefs like I did at Tiki Bar.]]

All in all a great trip filled with lots of fun and food. Hope you have similar stories from your summer vacas!

Clean Energy Solutions will maximize cost savings and New Jersey incentives

April 3rd, 2012: Huntersville, NC: Lime Energy Co. (NASDAQ: LIME) announced today that  Ocean Place has signed a partnering agreement under the NJ Clean Energy’s P4P to help identify and implement energy reduction and conservation measures to help reduce the resort’s consumption by a minimum of 15%.  Consisting of 254 guest rooms and event space, Ocean Place was built in 1989 and encompasses 255,000 square feet.

The investment grade audit follows Lime’s preliminary audit which identified energy conservation measures and infrastructure upgrades that would save Ocean Place over 35% in annual energy consumption.  Lime Energy’s analysis will also establish those measures that qualify for NJ Clean Energy Pay for Performance (P4P) incentives.  “Lime Energy has completed the largest P4P clean energy project in New Jersey to date,” said Al DiGuilio, Vice President of Energy Efficiency. “The combination of Lime’s clean energy expertise and experience with the P4P program with Ocean Place’s commitment to improving their facility will result in another best-in-class energy project in New Jersey.”

According to Ocean Place’s Director of Engineering Dan Walradt, environmental awareness and concern has become a significant factor in the decisions they make on a daily basis. “Many of our clients express interest in understanding the initiatives we are taking to reduce our carbon footprint. With over 250,000 square feet of conditioned space, Ocean Place can play a significant role in energy conservation.  Of course, it is equally important that the energy conservation measures (ECM’S) make financial sense for the business and operating expenses.  The Pay for Performance Program (P4P) will be a great fit for Ocean Place since it will have a positive impact on both.”

The P4P audit will evaluate every area of the building from the envelope down to each piece of mechanical equipment that consumes energy.  The project will be part of a large renovation planned to begin this fall. “We know how important it is that we do it right, and take everything into consideration when selecting replacement equipment and control systems,” said Walradt. “We are very excited to move forward on our vision of being an industry leader in our market as well as being a positive role model in our community.”

A New Beginning for Ocean Place

Ocean Place Resort & Spa holds event to kick off summer

By Christopher Sheldon

Ocean Place Resort & Spa, one of Long Branch's oldest and well-known businesses, kicked off the summer last week with an event that ushered in a new beginning for the hotel.

A celebratory event was held at the hotel, located 1 Ocean Blvd., to celebrate the beginning of the summer season with the ceremonial planting of the 72nd palm tree and the introduction of new management and a new chef.

Ocean Place Development LLC, owners of the hotel, filed for Chapter 11 earlier this year to "put a restructuring plan together" for the hotel according to hotel General Manager Brian Czechowski.

Czechowski said there were two main parts of the restructuring plan and both have come to fruition.

A new management company Coakley & Williams Hotel Management Company, based out of Greenbelt, Md., and a new equity partner, Jeffrey Fernback, president of Fernmoor Homes of Jackson, came on board in April.

Coakley & Williams will manage the hotel and Fernback will help develop a parcel of land around the hotel that ownership has been hoping to build up for years.

"We are now in the midst of putting together an updated plan for the use of the land that will be submitted to the (Long Branch) council for approval in the near future," Czechowski said.

Czechowski said Ocean Place will be in bankruptcy court in July to "make sure those two components are in place and that they are doing what they are supposed to do."

During last week's kick-off event, Coakley & Williams Senior Vice President of Operations Michael Nerlinger addressed guests and said he was happy to see the hotel get a fresh start.

"The hotel has gone through a difficult winter," Nerlinger said. "It excites me to see the property coming back to life."

Long Branch Mayor Adam Schneider also said he was excited for the start of the summer season at Ocean Place and the city.

"The hotel is right in the middle of some of the best activity on the Jersey Shore," Mayor Schneider said.

New Executive Chef Michael Giletto, who started working at Ocean Place on April 29, was on hand to showcase some food that he will be serving up to hungry hotel guests.

Giletto who said he specializes in using "farm-fresh ingredients with a sophisticated twist" has been getting to know his new staff for the last month and is happy to report it has been a pleasant experience.

"I've been teaching the guys some new techniques," Giletto said. "My theory about going into a new place is that you have to work your way into it."

He made a good first impression with the grilled oysters and clams on the shell with smoky barbecue sauce that he handed out during the event.

Giletto said guests can look forward to a new menu with some unique dishes such as his personal favorite, gnocchi with sage, brown butter and pancetta.

As the final palm tree was raised and planted outside the hotel near the Tiki Bar, the crowd cheered and knew that the hotel, even with its recent hardships, would continue to be an exemplary business in the Long Branch community.
